Quick breads and 101 cookbooks

I love quick breads. There's nothing heartwarming than making your own. I made this banana raisin bread in two variants-plain and chocolate flavoured. The recipe came from Sun Maid Raisins. It's so quick to make and so great as a breakfast toast topped with your favourite marmalade or spread.

Here's the original recipe:

Banana Raisin Loaf

Ingredients:

1/3 cup butter or margarine, melted
2/3 cup granulated sugar
2 large eggs
1 cup mashed bananas ( 2 medium size)
3 tbsps milk
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup raisins
1/2 cup chopped walnuts

Preheat oven to 350 F. Grease a 9x5 inch loaf pan. Combine butter, sugar and eggs; beat until well blended. Stir in banana and milk. Combine flour, baking powder, baking soda and salt. Add to banana mixture. Stir until well blended. Fold in raisins and walnuts. Spoon batter into greased pan. Bake for 55 to 60 minutes. Remove from pan and cool on a wire rack.

Other variations: Chocolate- Add 1/2 cup cocoa powder and increase granulated sugar to 1 cup.
