Cure for rainy day blues? Sing like a kettle and have yummy scone and tea!
It has been raining non-stop for days. I'm really looking forward to some happy patch of sunshine soon. Despite the gloomy weather things are warm and cozy in the kitchen. I made a batch of this yummy scone and it's so wonderful with spiced mulled tea. The flavors just evoke a very cozy feeling of Christmas!
Cranberry Scone Recipe
Ingredients:
- 2 cups flour
- 1/3 cup white sugar
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup butter
- 1/2 cup cranberries (dried or fresh)
- 2/3 cup milk
1.In a large bowl, whisk together the flour, sugar, baking powder and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender. Blend until flour mixture look like coarse crumbs. Stir in the cranberries. Add the milk and stir until just combined.
2. Transfer to a lightly floured surface and knead the dough four or five times and then pat, or roll, the dough into a circle that
is 7 inches (18 cm) round and about 1 1/2 inches (3.75 cm) thick. Cut this
circle into 8 triangular sections.
3. Transfer to the prepared sheet and brush the
top of the scones with milk. Sprinkle with sliced almonds.
Bake
for about 15 - 20 minutes or until lightly browned and a toothpick inserted into the center
of a scone comes out clean. Serve with your favorite jam.
Makes 8 scones.
