Albeit belated, I'm having my gingerbread fix with this yummy muffin recipe from Betty Crocker. Spicy and fragrant it's great with homemade latte.
Gingerbread Muffins
Ingredients:
1/4 cup brown sugar
1/2 cup molasses
1/3 cup milk
1/3 cup oil
1 egg
2 cups all purpose flour
1 tsp baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1. Beat sugar, molasses, milk, oil and egg in a bowl.
2. Sift together all dry mixture and add to mixture. Stir well and spoon to muffin cups. Bake for 20 minutes on a 350 F oven.
