Recipe: Betty's Oatmeal-Chocolate Chip Cookies
Happy new year! Time to chase a brand new set of (hashtag) goals! How about a sweet but healthy treat this new year? Something to grab on your way out of the door on a super hectic weekday commute. You won't go wrong with this hearty breakfast cookie recipe form Betty Crocker. I used mini chocolate chips and cacao nibs for my version and omitted the nuts. It still taste absolutely yummy!
Betty's Oatmeal-Chocolate Chip Cookies
Ingredients:
1- 1/2 cups packed brown sugar
1 cup butter
1 tsp vanilla
2 cups quick-cooking oats
1- 1/2 cup all-purpose flour
1 tsp. baking soda
1 cup mini chocolate chips
1/2 cup cacao nibs
Directions:
1. Using a mixer, cream butter and brown sugar. Add egg and vanilla. In a bowl, str together all-purpose flour and baking soda.
2. Slowly add flour mixture to creamed butter. Add oats, chocolate chips and nibs and mix well.
3. Use a small ice cream scoop to measure cookie dough and form into balls.
4. Arrange on a cookie tray lined with baking sheet or Silpat. Have at least 3 inches space between the cookie balls as the cough dough will expand and flatten out.
5. Bake at 350F until golden brown. Enjoy!
