Recipe: Oatmeal Chia Flax Cookies
Chia Oatmeal and Flax Cookies
Here's another way to make oatmeal cookies even better. Add good stuff such as chia and flax seeds, sesame seeds and desiccated coconut for added bulk and fiber. This is great as a quick breakfast cookie or a mid-afternoon picker-upper.
Ingredients:
- 1 cup quick cooking oats
- 1 cup all-purpose flour
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 1 tablespoon black sesame seeds
- 3/4 cup desiccated coconut
- 1 tsp. cinnamon powder
- 1/4 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp baking soda
- 1/2 cup butter
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1 egg
Directions:
- 1. Cream butter and brown sugar. Add egg and vanilla.
- 2. In a bowl, sift together all-purpose flour, cinnamon, salt, baking powder and baking soda.
- 3. Using a wooden spoon, stir in oatmeal, flax and chia seeds and desiccated coconut. Blend until thoroughly mixed.
- 4. Form cookie dough into 2 inch balls, flatten and arrange on a parchment lined baking tray.
- 5. Bake at 350F until golden brown.
