Recipe: Upside Down Pudding
Upside down cakes are nostalgic treats that remind us of sunny, childhood afternoons and beach days. This particular recipe was shared by a friend with me who swears that the addition of glacé fruits gives this easy to bake treat a fruitcake like texture and crunch. Use the best butter you can find!
Ingredients:
- 1/2 cup softened unsalted butter
- 1 cup caster sugar
- 2 eggs
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/ tsp salt
- 1 tsp baking soda
- round sliced pineapples
- Glacé fruits
- Maraschino cherries
- Cooking spray
Directions:
1. Pre-heat oven to 180 C/350 F.
2. In a mixer, cream butter and caster sugar. Add eggs and mix well.
3. In a bowl, sift together all-purpose flour, baking powder, salt and baking soda.

4. Gradually add dry ingredients to creamed mixture.
5. Cover bottom of round cake pan with glassine paper. Coat pan with cooking spray.
6. In a small bowl, make a glaze by mixing 1/4 cup butter with 1/4 cup brown sugar and a pinch of cinnamon.
7. Brush bottom of paper lined cake pan with brown sugar glaze.
8. Carefully arrange pineapple slices, cherries and glacé fruits on the bottom of the pan.
9. Spoon cake batter by dollops. Do not pour.
10. Bake at 180 C/ 350 F until toothpick inserted in the middle of the cake comes out clean.
