Recipe: Tuna Patties
You can't go wrong with canned tuna. You can make infinite recipes out of it and this lenten season, tuna patties take the (fish)cake! This recipe is adapted from Simply Recipes. I love serving this dish with a twist of lemon for added zing.

TUNA PATTIES
Ingredients:
- 2 cans tuna in water
- 1 cup cubed white bread
- 1 egg
- 1 tbsp mustard
- 1 tbsp finely chopped green onions
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Zest of one lemon
- 2 tbsp milk
- 2 tbsp all-purpose flour
- 1 tbsp water from canned tuna
- olive oil and 1/4 cup butter
Directions:
1. Drain canned tuna in water, reserving 1 tablespoon of water. Combine tuna with cubed white bread, mustard, lemon juice, salt and pepper, milk, green onions and egg. Mix well and add 2 tablespoons of all-purpose flour for binding.
2. Form tuna mixture into 2 inch patties on a wax paper lined plate. Chill in the refrigerator for 10 minutes or so until firm.
3. In a frying pan, prepare olive oil and add butter until melted. Pan fry patties until golden brown on both sides.
4. Drain on a paper towel and serve hot. Garnish with twists of lemon.
