Happy new year! Life has been super hectic these past few months and I apologize for the lack of new content. How is 2024 so far? The holidays went by like a blur and I didn't get to do the usual Christmassy things I usually do like bake cookies from scratch and sew handmade stuff.
2023 was all about doing easy, practical stuff at the least possible time. One example is this No Bake Chocolate Graham Cream Cake that you can whip in less than 30 minutes. A perfect dessert for your holiday table or weekend gatherings.

easy, no bake chocolate cream cake is the perfect kitchen project for
busybodies. Absolutely no baking involved! A fabulous dessert to share
with family and friends.

How to make cream mixture:
- In a chilled stainless steel bowl, blend together 2 boxes of chilled all-purpose cream and condensed milk.
- Dissolve 2 packets of unflavored gelatine in 1/2 cup hot water. Blend with a whisk until frothy and dissolved. Let cool down for a bit. Add cream mixture to dissolved gelatin.
- Using a mixer, blend ingredients until thick and spreadable.
How to make chocolate ganache topping:
- Melt dark chocolate in a sauce pan at low heat until melted. Add 1 box of all-purpose cream. Add a splash of vanilla and a pinch of coffee or espresso powder.
- Mix well until thickened and creamy. Do not overcook.
How to assemble:
- Prepare a clean, Pyrex glass baking dish.
- Arrange chocolate graham crackers on glass dish until all areas are fully covered.
- 3. Spread a layer of cream mixture.
- Alternate layers of chocolate graham crackers and cream mixture.
- On the top cream layer, pour melted chocolate ganache. Use a whisk to create a fancy marbled design.
- Let cool and chill in the refrigerator until ready to eat.
